  • 2 lbs Beef chuck cut into 1-inch cubes
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 3 Carrots peeled and sliced
  • 3 Potatoes peeled and cubed
  • 4 cups Beef broth
  • 2 tbsp Tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dried thyme
  • 2 Bay leaves
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Preparation

  • Pat the beef cubes dry with paper towels and season with salt and pepper.
  • Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  • Sear beef in batches until browned on all sides, then remove and set aside.

Cooking the Stew

  • Add onion to the pot and sauté until softened, about 5 minutes.
  • Stir in tomato paste and cook for 2 minutes, then deglaze the pot with a splash of beef broth.
  • Return beef to the pot, then add remaining beef broth, carrots, potatoes, Worcestershire sauce, thyme, and bay leaves.
  • Bring to a simmer, then reduce heat to low, cover, and cook for 2-3 hours or until beef is tender.

Finishing Touches

  • Remove bay leaves before serving.
  • Taste and adjust seasoning as needed.

Notes

For a thicker stew, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 15 minutes of cooking. This recipe can also be made in a slow cooker on low for 6-8 hours or high for 3-4 hours.
