  • 200 g Spaghetti

Vegetables

  • 1 cup Broccoli florets
  • 1 cup Cherry tomatoes, halved
  • 1 Zucchini, thinly sliced
  • 1 Bell pepper, thinly sliced any color

Sauce

  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 0.5 cup Vegetable broth
  • 0.25 cup Parmesan cheese, grated
  • 0.25 cup Fresh basil, chopped
  • Salt to taste
  • Black pepper to taste

Cooking steps

  • Cook spaghetti according to package directions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  • While pasta cooks, heat olive oil in a large skillet over medium heat and sauté minced garlic for 1 minute until fragrant.
  • Add broccoli, cherry tomatoes, zucchini, and bell pepper to the skillet and cook for 5-7 minutes, until vegetables are tender-crisp.
  • Add cooked and drained spaghetti to the skillet with the vegetables.
  • Pour in vegetable broth and reserved pasta water, then stir in grated Parmesan cheese, fresh basil, salt, and black pepper.
  • Toss everything together until well combined and the sauce lightly coats the pasta and vegetables. Serve immediately.

Notes

For extra flavor, you can add a squeeze of lemon juice at the end. Feel free to use any seasonal vegetables you have on hand, such as asparagus, spinach, or peas.
