  • 4 cups Watermelon cubed
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Fresh mint chopped
  • 1/4 cup Red onion thinly sliced (optional)
  • 1 tbsp Olive oil
  • 1 tbsp Balsamic glaze (optional)
  • Salt to taste
  • Black pepper to taste

Preparation

  • In a large bowl, combine the cubed watermelon, crumbled feta cheese, and chopped fresh mint.
  • If desired, add thinly sliced red onion. Drizzle with olive oil and balsamic glaze, then gently toss to combine.
  • Season with salt and black pepper to taste, and serve immediately.

Notes

For best results, use a ripe watermelon. You can also add a squeeze of fresh lime juice for extra zing.
