Preparation
In a large bowl, combine the cubed watermelon, crumbled feta cheese, and chopped fresh mint.
If desired, add thinly sliced red onion. Drizzle with olive oil and balsamic glaze, then gently toss to combine.
Season with salt and black pepper to taste, and serve immediately.
Notes
For best results, use a ripe watermelon. You can also add a squeeze of fresh lime juice for extra zing.
