  • Rolling pin
  • Round cutter (2.5-inch)
  • Wire rack

Ingredients

For the Strawberries

  • 4 cups strawberries, hulled and sliced
  • 0.25 cup granulated sugar

For the Shortcakes

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.75 cup heavy cream
  • 1 egg, beaten

For Serving

  • 1 cup whipped cream

Instructions

Prepare the Strawberries

  • In a medium bowl, combine the sliced strawberries and granulated sugar. Gently toss and set aside to macerate for at least 30 minutes.

Make the Shortcakes

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Cut in the cold, cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  • Gradually add the heavy cream, mixing until just combined and a shaggy dough forms.
  • Lightly flour a surface, then turn out the dough and gently knead a few times until it comes together.
  • Pat the dough into a 1-inch thick circle, then cut out 6 shortcakes using a 2.5-inch round cutter.
  • Place the shortcakes on the prepared baking sheet, brush the tops with beaten egg, and bake for 12-15 minutes until golden brown.

Assemble and Serve

  • Allow the baked shortcakes to cool on a wire rack for a few minutes.
  • Split each shortcake in half horizontally, then spoon a generous amount of macerated strawberries over the bottom half.
  • Top with a dollop of whipped cream and the other shortcake half before serving immediately.

Notes

For an extra touch, you can add a hint of vanilla extract to the whipped cream. Ensure your butter is very cold for the flakiest shortcakes. You can make the strawberry mixture an hour or two ahead of time for more flavor.
