Ingredients
  

For the Salad

  • 2 cups cooked chicken, shredded
  • 6 cups romaine lettuce, chopped
  • 1 can (15-ounce) black beans, rinsed and drained
  • 1 cup corn kernels, fresh or frozen (thawed)
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced
  • 1 avocado, diced

For the Dressing

  • 0.5 cup plain Greek yogurt
  • 2 tbsp lime juice freshly squeezed
  • 0.5 tsp chipotle powder or to taste
  • 0.5 tsp cumin
  • 0.25 tsp garlic powder
  • 0.25 tsp salt or to taste
  • 0.125 tsp black pepper or to taste

Instructions
 

Prepare the Salad

  • In a large bowl, combine the shredded chicken, chopped romaine lettuce, rinsed black beans, corn, halved cherry tomatoes, thinly sliced red onion, and diced avocado.
  • Gently toss all the ingredients to combine them well.

Make the Dressing

  • In a small bowl, whisk together the Greek yogurt, lime juice, chipotle powder, cumin, garlic powder, salt, and black pepper until the dressing is smooth and well combined.
  • Taste the dressing and adjust the seasonings if needed.

Assemble and Serve

  • Pour the prepared dressing over the salad ingredients.
  • Toss everything together until the salad is evenly coated with the dressing.
  • Serve the Southwest Chicken Salad immediately and enjoy your meal.

Notes

For extra crunch, you can add crushed tortilla chips or a sprinkle of toasted pumpkin seeds. This salad is also great for meal prep; keep the dressing separate and add it just before serving to prevent the lettuce from wilting.
