Ingredients
  

Rhubarb Filling

  • 4 cups rhubarb, chopped
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Crumble Topping

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1/2 cup cold unsalted butter, diced

Optional Garnish

  • vanilla ice cream or whipped cream for serving

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease an 8x8 inch baking dish.
  • In a large bowl, combine the chopped rhubarb, granulated sugar, cornstarch, and lemon juice; stir until the rhubarb is evenly coated.
  • Pour the rhubarb mixture into the prepared baking dish and spread it evenly.

Crumble Topping

  • In a separate medium bowl, combine the all-purpose flour, rolled oats, and brown sugar.
  • Add the diced cold butter and use your fingertips or a pastry blender to cut it into the dry ingredients until coarse crumbs form.

Baking

  • Sprinkle the crumble topping evenly over the rhubarb mixture in the baking dish.
  • Bake for 30-35 minutes, or until the topping is golden brown and the rhubarb is tender and bubbly.

Serving

  • Let the dessert cool slightly before serving, and optionally serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the crumble topping. You can also substitute some of the sugar with maple syrup for a different sweetness profile.
