Pasta

  • 12 ounces linguine

Shrimp and Sauce

  • 1.5 pounds large shrimp, peeled and deveined
  • 0.5 cup unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 0.5 cup dry white wine or chicken broth
  • 0.25 cup lemon juice
  • 0.5 teaspoon red pepper flakes optional
  • 0.25 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions
 

Cooking the Pasta

  • Cook the linguine according to package directions in a large pot of salted boiling water until al dente.
  • Before draining, reserve about 1 cup of the pasta water and then drain the pasta.

Preparing the Shrimp Scampi Sauce

  • While the pasta cooks, melt the butter with olive oil in a large skillet or pan over medium heat.
  • Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
  • Stir in the shrimp and cook for 2-3 minutes per side until pink and opaque.
  • Pour in the white wine or chicken broth and lemon juice, then bring the mixture to a simmer.
  • Season the sauce with salt and black pepper to taste.
  • Toss the cooked and drained linguine directly into the skillet with the shrimp and sauce.
  • Add a splash of the reserved pasta water to create a silky sauce, if needed, then stir in the fresh parsley.

Notes

For extra flavor, you can marinate the shrimp in a little lemon juice and garlic for 15 minutes before cooking. Serve with a sprinkle of Parmesan cheese and crusty bread to soak up the delicious sauce.
