For the Roasted Corn

  • 4 ears of corn
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Caesar Salad

  • 2 romaine lettuce hearts
  • 1 cup croutons
  • 1/2 cup Parmesan cheese shaved or grated

For the Caesar Dressing

  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 2 tablespoons Parmesan cheese grated
  • 1/4 teaspoon black pepper

Instructions
 

Roast the Corn

  • Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  • Remove the husks and silks from the corn, then brush each ear with olive oil and season evenly with smoked paprika, salt, and black pepper.
  • Place the seasoned corn on the prepared baking sheet and roast for 20-25 minutes, turning occasionally, until the kernels are tender and slightly charred.

Prepare the Dressing

  • While the corn roasts, whisk together mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, grated Parmesan cheese, and black pepper in a small bowl until the dressing is smooth and well combined.

Assemble the Salad

  • Once the roasted corn is cool enough to handle, carefully cut the kernels off the cobs using a sharp knife.
  • In a large salad bowl, combine the chopped romaine lettuce, roasted corn kernels, and croutons.
  • Pour the Caesar dressing over the salad ingredients and toss gently to ensure everything is evenly coated.
  • Serve immediately, garnished with additional shaved or grated Parmesan cheese, if desired.

Notes

For an extra smoky flavor, you can grill the corn instead of roasting it. You can also add grilled chicken or shrimp for a more substantial meal.
