Ingredients
  

For the Brownies

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp salt

For the Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Decoration (Optional)

  • 1/4 cup white chocolate, melted
  • 2 tbsp Sprinkles
  • 2 tbsp red velvet crumbs

Instructions
 

Brownie Bites

  • Preheat your oven to 350°F (175°C) and line two mini muffin tins with paper liners.
  • In a large bowl, whisk together the melted butter and granulated sugar until well combined.
  • Beat in the egg, vanilla extract, and red food coloring until the mixture is smooth and vibrant.
  • In a separate bowl, sift together the all-purpose flour, cocoa powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined and no streaks of flour remain.
  • Spoon the batter into the prepared mini muffin tins, filling each liner about two-thirds full.
  • Bake for 12-15 minutes, or until a toothpick inserted into the center of a brownie bite comes out with moist crumbs.
  • Let the brownie bites cool in the tins for a few minutes before transferring them to a wire rack to cool completely.

Cream Cheese Frosting

  • In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy.
  • Gradually add the powdered sugar, one cup at a time, beating until fully incorporated and frosting is light and fluffy.
  • Stir in the vanilla extract until combined.

Assembly

  • Once the brownie bites are completely cool, pipe or spread a dollop of cream cheese frosting on top of each one.
  • If desired, drizzle with melted white chocolate, sprinkle with sprinkles, or garnish with red velvet crumbs.

Notes

For a richer red color, you can add an extra teaspoon of red food coloring. Make sure the butter and cream cheese are softened to room temperature for a smooth frosting.
