  • 1.5 lbs Chicken breast cut into 1-inch pieces
  • 2 Carrots diced
  • 2 Celery stalks diced
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 4 cups Chicken broth
  • 0.5 cup Heavy cream
  • 1 cup Frozen peas
  • 16 oz Potato gnocchi
  • 1 tsp Fresh thyme chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Cooking Steps

  • Heat olive oil in a large pot over medium heat, then add chicken and cook until browned; remove chicken and set aside.
  • Add carrots, celery, and onion to the pot, cooking until softened; stir in garlic and cook for one more minute.
  • Pour in chicken broth and heavy cream, bringing the mixture to a simmer.
  • Stir in frozen peas, gnocchi, cooked chicken, thyme, salt, and pepper, then cook for 5-7 minutes until gnocchi is tender and sauce has thickened.

Notes

For extra flavor, you can add a bay leaf to the broth while simmering and remove it before serving. A sprinkle of fresh parsley or chives at the end adds a nice touch of freshness and color.
