  • 3 cups Romaine lettuce, chopped
  • 3 large whole wheat tortillas or wraps
  • 0.75 cup Caesar dressing
  • 0.25 cup Parmesan cheese, shredded
  • 1 tablespoon lemon, juiced
  • 1 tablespoon olive oil
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper

Preparation

  • In a medium bowl, toss the peeled and deveined shrimp with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  • Preheat your grill or grill pan to medium-high heat. While it's heating, prepare the Caesar dressing by mixing it with fresh lemon juice in a small bowl.

Cooking

  • Grill the seasoned shrimp for 2-3 minutes per side, or until they turn pink and opaque, indicating they are cooked through.
  • Warm the whole wheat tortillas on the grill for about 15-30 seconds per side until they are soft and pliable.

Assembly

  • Divide the chopped Romaine lettuce evenly among the warmed tortillas, then top each with grilled shrimp.
  • Drizzle each wrap generously with the lemon-Caesar dressing and sprinkle with shredded Parmesan cheese.
  • Fold in the sides of the tortillas, then roll them up tightly to form the wraps and serve immediately.

Notes

For an extra kick, add a pinch of red pepper flakes to the shrimp seasoning. You can also customize your wraps with additional vegetables like diced cucumber or cherry tomatoes. Serve with a side of fruit for a complete meal.
