Preparation

  • Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  • In a medium bowl, whisk together the flour, baking powder, and salt, then set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gradually add the dry ingredient mixture to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  • Gently fold in the diced fresh strawberries.
  • Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Frosting

  • While the cakes cool, prepare the cream cheese frosting by beating the softened cream cheese and butter together until smooth.
  • Gradually add the powdered sugar, then beat in the vanilla extract and pureed strawberries until the frosting is smooth and creamy.
  • Once the cakes are completely cool, frost and decorate as desired.
