  • 4 medium potatoes peeled and diced
  • 4 cups chicken or vegetable broth
  • 0.5 cup milk
  • 2 tbsp butter

  • 0.5 tsp black pepper freshly ground
  • 2 tbsp fresh parsley chopped for garnish

Preparation

  • Melt butter in a large pot or Dutch oven over medium heat. Add the minced garlic and sauté for about one minute until fragrant, being careful not to burn it.
  • Stir in the diced potatoes and cook for 5 minutes, stirring occasionally. Pour in the chicken or vegetable broth, then bring the mixture to a boil.

Cooking

  • Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  • Carefully mash about half of the potatoes directly in the pot using a potato masher or the back of a spoon to create a thicker consistency.
  • Stir in the milk, salt, and black pepper. Continue to heat through for a few more minutes, ensuring the soup is hot but not boiling.

Serving

Notes

For an extra creamy soup, you can blend a portion of the soup with an immersion blender before adding the milk. Adjust seasoning to your taste, adding more salt and pepper if desired. You can also add a pinch of red pepper flakes for a little kick.
