  • 1 (12-14 pound) whole turkey
  • 0.5 cup butter, softened
  • 1 tablespoon salt
  • 0.5 tablespoon black pepper
  • 2 onions, quartered
  • 2 celery stalks, roughly chopped
  • 2 carrots, roughly chopped
  • 2 cups chicken broth

Preparation

  • Preheat your oven to 375°F (190°C) and remove the turkey giblets and neck. Pat the turkey dry with paper towels.
  • In a small bowl, mix the softened butter with salt and pepper.
  • Rub the butter mixture all over the turkey, including under the skin.
  • Place the quartered onions, chopped celery, and carrots in the turkey cavity.

Roasting

  • Place the turkey on a rack in a large roasting pan and pour chicken broth into the bottom of the pan.
  • Roast for 2.5 to 3 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
  • If the skin browns too quickly, loosely cover the turkey with foil.
  • Once cooked, remove the turkey from the oven, tent it with foil, and let it rest for 20-30 minutes before carving.

Notes

For extra flavor, consider adding fresh herbs like rosemary or thyme to the butter mixture. Basting the turkey every hour can help keep it moist, although this quick method is designed to minimize that need.
