  • 1 cup Orzo pasta
  • 1 Cucumber diced
  • 1 pint Cherry tomatoes halved
  • 0.5 Red onion thinly sliced
  • 0.5 cup Feta cheese crumbled

Dressing

  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation

  • Cook orzo according to package directions, then drain and rinse with cold water to cool.

Assembly

  • In a large bowl, combine the cooled orzo, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and crumbled feta cheese.
  • Whisk together olive oil, lemon juice, dried oregano, salt, and black pepper in a small bowl to create the dressing.
  • Pour the dressing over the orzo mixture and toss gently to combine all ingredients thoroughly.

Notes

For extra flavor, you can add fresh mint or parsley. This salad is also great with grilled chicken or shrimp.
