  • 1.5 lbs chicken breasts
  • 0.5 cup teriyaki sauce
  • 1 can canned pineapple chunks undrained
  • 1 bell pepper sliced
  • 0.5 onion sliced
  • 1 tsp garlic powder
  • rice for serving

Preparation

  • Cut chicken breasts into bite-sized pieces and set aside. Slice the bell pepper and onion.
  • In a medium bowl, combine the teriyaki sauce, undrained pineapple chunks, garlic powder, and mix well.

Cooking

  • Heat a large skillet or wok over medium-high heat. Add the chicken and cook until browned.
  • Add the sliced bell pepper and onion to the skillet and sauté for 3-5 minutes until slightly tender.
  • Pour the teriyaki pineapple sauce mixture over the chicken and vegetables. Bring to a simmer and cook for 5-7 minutes, or until the sauce thickens and the chicken is cooked through.

Serving

  • Serve immediately over cooked rice.

Notes

For extra flavor, marinate the chicken in a little teriyaki sauce for 15-30 minutes before cooking. You can also add other vegetables like snap peas or broccoli florets. Adjust the amount of teriyaki sauce to your taste.
