  • 2 cups Cooked white rice preferably day-old
  • 2 Large eggs
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 tablespoon Vegetable oil
  • 1/2 cup Frozen peas and carrots
  • 2 Green onions sliced

Seasoning

  • Salt to taste
  • Black pepper to taste

Preparation

  • Whisk eggs in a small bowl with a pinch of salt and pepper; set aside.
  • Prepare your ingredients: have your day-old rice, soy sauce, sesame oil, and vegetables ready by the stove.

Cooking

  • Heat vegetable oil in a large skillet or wok over medium-high heat. Add the whisked eggs and scramble until just set, then remove from skillet and set aside.
  • Add a bit more oil if needed, then add the frozen peas and carrots to the skillet and stir-fry for 2-3 minutes.
  • Add the day-old rice to the skillet, breaking up any clumps with your spoon or spatula, and stir-fry for 3-5 minutes until heated through and slightly crispy.
  • Pour the soy sauce and sesame oil over the rice, stirring well to combine.
  • Return the scrambled eggs to the skillet and stir in the sliced green onions, cooking for another minute until everything is well combined and hot.

  • Serve your perfect egg fried rice immediately and enjoy.

Notes

Using day-old rice is key to achieving the perfect fried rice texture, as fresh rice can be too moist. Adjust soy sauce and seasoning to your preference.
