  • 4 chicken breasts boneless, skinless
  • ½ cup all-purpose flour
  • 2 eggs beaten
  • 1 cup bread crumbs panko recommended
  • ½ cup Parmesan cheese grated
  • 2 cups marinara sauce
  • cups mozzarella cheese shredded

Seasoning

  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder

  • 2 cups vegetable oil for frying

Preparation

  • Pound chicken breasts to an even ½-inch thickness; season both sides with salt, pepper, and garlic powder.
  • Set up a breading station: one shallow dish with flour, one with beaten eggs, and one with bread crumbs mixed with grated Parmesan cheese.

Cooking

  • Dredge each chicken breast in flour, then egg, then the bread crumb mixture, ensuring full coverage.
  • Heat vegetable oil in a large skillet over medium-high heat. Fry breaded chicken for 3-4 minutes per side, until golden brown and cooked through.
  • Preheat oven to 375°F (190°C). Transfer fried chicken to a baking dish, spoon marinara sauce over each breast, and top generously with shredded mozzarella.

Baking & Serving

  • Bake for 10-15 minutes, or until the cheese is melted and bubbly and the chicken is heated through.
  • Serve immediately, garnished with fresh basil if desired, alongside pasta or a fresh salad.

Notes

For extra flavor, add a pinch of Italian seasoning to the bread crumb mixture. Adjust cooking times based on the thickness of your chicken breasts to ensure they are fully cooked but not dry.
