  • 1 _ Onion, chopped

  • 2 cloves Garlic, minced
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 16 ounces Potato gnocchi
  • 5 ounces Fresh spinach
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped for garnish

Preparation

  • Heat olive oil in a large pot over medium heat, then add chicken and cook until browned and cooked through, about 5-7 minutes.
  • Remove chicken and set aside, shredding it once cooled enough to handle.
  • Add onion, celery, and carrots to the pot and cook until softened, about 5-7 minutes, then stir in garlic and cook for 1 minute more.

Cooking the Soup

  • Pour in chicken broth and bring to a simmer, then add gnocchi and cook according to package directions, typically 2-3 minutes.
  • Stir in heavy cream, spinach, shredded chicken, salt, and pepper, cooking until spinach wilts, about 2-3 minutes.

Serving

  • Ladle the soup into bowls and garnish with fresh parsley before serving warm.

Notes

For a richer soup, consider using half-and-half instead of heavy cream. You can also add other herbs like thyme or rosemary for additional flavor. If you don't have fresh spinach, frozen spinach can be used; just be sure to thaw and drain it well before adding to the soup.
