  • 3 medium potatoes, peeled and sliced
  • 2 medium carrots, sliced
  • 1 medium onion, chopped
  • 1 10.75 oz can cream of mushroom soup
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large skillet, brown the ground beef over medium heat; drain any excess fat and set aside.
  • In a large bowl, combine the sliced potatoes and carrots, chopped onion, and cooked ground beef.
  • In a separate bowl, whisk together the cream of mushroom soup, milk, salt, and pepper.
  • Pour the soup mixture over the beef and vegetable mixture, stirring gently to combine.

Baking

  • Transfer the entire mixture into the prepared baking dish and spread evenly.
  • Bake for 25-30 minutes, or until the vegetables are tender.
  • Remove the casserole from the oven, sprinkle with shredded cheddar cheese, and return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
  • Let the casserole stand for a few minutes before serving.

Notes

For an extra layer of flavor, consider adding a pinch of garlic powder or dried herbs to the soup mixture. You can also customize the vegetables based on your preference, adding corn, peas, or bell peppers. Shredded mozzarella or a blend of cheeses can be used instead of cheddar.
