  • 2 lbs chicken breast
  • 8 cups chicken broth
  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 2 cups potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • salt to taste
  • black pepper to taste

Preparation

  • Place chicken breasts at the bottom of the crock pot.
  • Add chopped carrots, celery, diced potatoes, chopped onion, and minced garlic to the crock pot.
  • Pour in chicken broth and add bay leaves, salt, and pepper.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender and vegetables are soft.
  • Remove chicken breasts and shred them using two forks, then return shredded chicken to the crock pot.
  • Stir well and serve hot, removing bay leaves before serving.

Notes

For extra flavor, you can add fresh herbs like thyme or rosemary during the last hour of cooking. This soup freezes well for future meals.
