Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly greasing it.
  • Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat.
  • Add diced carrots and celery to the skillet and cook for 5-7 minutes until softened.
  • Stir in the flour and cook for 1 minute, ensuring it's fully incorporated.
  • Gradually whisk in the chicken broth and heavy cream, bringing the mixture to a simmer.
  • Add cooked chicken, gnocchi, frozen peas, fresh thyme, salt, and pepper to the skillet, stirring to combine.

Baking

  • Pour the chicken and gnocchi mixture into the prepared baking dish.
  • Place the thawed puff pastry sheet over the filling, trimming any excess and crimping the edges for a seal.
  • Brush the top of the puff pastry with the beaten egg wash and cut a few small slits for steam to escape.
  • Bake for 20-25 minutes, or until the pastry is golden brown and puffed, and the filling is bubbling.
  • Let the pot pie rest for 5-10 minutes before serving to allow it to set.

Notes
