Meatloaf

  • 1 lb ground chicken
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup bread crumbs
  • 1 large egg
  • 2 cloves minced garlic
  • 1 tsp dried parsley
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Glaze

  • 0.25 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • In a large bowl, combine all meatloaf ingredients (ground chicken, Parmesan cheese, bread crumbs, egg, garlic, parsley, onion powder, salt, and pepper) and mix thoroughly.
  • Form the mixture into a loaf shape and place it in the prepared baking dish.

Cooking

  • Bake for 25 minutes.
  • While the meatloaf bakes, whisk together ketchup, brown sugar, and Worcestershire sauce for the glaze.
  • After 25 minutes, remove the meatloaf from the oven and spread the glaze evenly over the top.
  • Return to the oven and bake for an additional 10-15 minutes, or until cooked through and the internal temperature reaches 165°F (74°C).
  • Let the meatloaf rest for 5 minutes before slicing and serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the meatloaf mixture. This meatloaf pairs well with mashed potatoes or a simple side salad.
