  • 4 large onions
  • 4 tbsp butter
  • 6 cups beef broth
  • 0.5 cup dry white wine
  • 1 bay leaf
  • 2 thyme sprigs
  • 8 baguette slices
  • 1 cup Gruyere cheese, shredded

Preparation

  • Slice the onions thinly and melt butter in a large pot or Dutch oven over medium heat.
  • Add the sliced onions to the pot and cook, stirring occasionally, for 30-40 minutes until deeply caramelized and golden brown.
  • Pour in the dry white wine, scraping up any browned bits from the bottom of the pot, then add the beef broth, bay leaf, and thyme sprigs.
  • Bring the soup to a simmer and cook for at least 20 minutes to allow the flavors to meld, then remove the bay leaf and thyme sprigs.

Serving

  • Preheat your oven's broiler and ladle the soup into oven-safe bowls.
  • Float two baguette slices on top of each bowl of soup and sprinkle generously with shredded Gruyere cheese.
  • Broil for 2-3 minutes, or until the cheese is bubbly and golden brown, then serve immediately.

Notes

For an extra rich flavor, you can deglaze the pot with a splash of brandy before adding the wine.
