  • 1 tablespoon Granulated sugar

  • 2.25 teaspoons Instant yeast

  • 1.5 cups Milk
  • 0.5 cup Water
  • 2 tablespoons Butter, melted

  • 2 tablespoons Cornmeal

Preparation

  • In a large bowl, whisk together the flour, sugar, salt, and instant yeast.
  • In a separate microwave-safe bowl, heat milk and water until warm (105-115°F/40-46°C), then stir in the melted butter.

Mixing and Rising

  • Pour the wet ingredients into the dry ingredients and mix with a spoon until just combined; the dough will be shaggy and sticky.
  • Cover the bowl with plastic wrap and let it rise in a warm place for 45 minutes to 1 hour, or until doubled in size.

Baking

  • Preheat oven to 375°F (190°C), then grease a loaf pan and sprinkle generously with cornmeal.
  • Gently transfer the risen dough into the prepared loaf pan and bake for 30-35 minutes, or until golden brown and cooked through.

Cooling

  • Remove the bread from the pan and let it cool completely on a wire rack before slicing and serving.

Notes

This bread is best served toasted with butter and jam, or used for sandwiches. The cornmeal gives it the classic English muffin texture. For a chewier crust, you can spray the oven with water a few times during the first 10 minutes of baking.
