Ingredients
  

For the Cookies

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Frosting

  • 2 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • food coloring (optional)

Instructions
 

For the Cookies

  • Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  • Whisk together the flour, baking powder, and salt in a medium bowl; set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 8-10 minutes, or until the edges are lightly golden; let cool completely on a wire rack.

For the Frosting

  • In a medium bowl, beat the powdered sugar and softened butter until smooth and creamy.
  • Gradually add the milk and vanilla extract, beating until the frosting reaches desired consistency.
  • If desired, mix in a few drops of food coloring.
  • Once the cookies are completely cool, spread or pipe the frosting onto each cookie.

Notes

For extra festive cookies, sprinkle with decorative sprinkles after frosting while the frosting is still wet.
