Equipment

  • 9-inch pie plate
  • large bowl
  • wire rack

Ingredients

Filling

  • 6 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon ground cinnamon

Crust

  • 2 refrigerated pie crusts (from a 14.1-ounce package)

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and then gently unfold one of the pie crusts, pressing it into a 9-inch pie plate.
  • In a large bowl, combine the blueberries, sugar, flour, lemon juice, and cinnamon, mixing gently until the blueberries are evenly coated.
  • Pour the blueberry mixture into the pie crust, spreading it out evenly.

Assembly and Baking

  • Carefully place the second pie crust over the filling and crimp the edges of both crusts together to seal the pie.
  • Cut a few slits into the top crust to allow steam to escape during baking.
  • Bake the pie for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.

Cooling

  • Let the pie cool completely on a wire rack before serving, as this allows the filling to set properly.

Notes

For extra flavor, you can sprinkle a tablespoon of sugar over the top crust before baking. If the crust starts to brown too quickly, you can cover the edges with aluminum foil.
