For the Peaches

  • 6 large peaches fresh or canned, sliced
  • 0.5 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

For the Topping

  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter cold, cut into cubes
  • 0.5 cup milk

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine the sliced peaches with 1/2 cup granulated sugar, cornstarch, and lemon juice, then toss gently to coat.

Assemble and Bake

  • Pour the peach mixture into the prepared baking dish and spread evenly.
  • In a separate bowl, whisk together flour, 1/2 cup granulated sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs, then stir in the milk until just combined.
  • Drop spoonfuls of the topping mixture over the peaches.
  • Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly and tender.

Serve

  • Let the cobbler cool slightly before serving.
