  • 1.5 lbs Boneless, skinless chicken breasts cubed
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 8 pieces Wooden or metal skewers

  • Cut chicken into 1-inch cubes and combine with olive oil, lemon juice, garlic powder, paprika, salt, and pepper in a bowl. Marinate for at least 15 minutes, or up to 30 minutes for more flavor.
  • Thread the marinated chicken pieces onto the skewers. If using wooden skewers, remember to soak them in water beforehand for 30 minutes to prevent burning.
  • Preheat your grill to medium-high heat (about 375-400°F or 190-200°C) and lightly oil the grates to prevent sticking.
  • Place the skewers on the hot grill and cook for 8-12 minutes, turning occasionally, until the chicken is cooked through and lightly charred. An internal temperature of 165°F (74°C) should be reached.
  • Remove the skewers from the grill and let them rest for a few minutes before serving. This helps to keep the chicken juicy.

Notes

For extra flavor, experiment with different spice blends like Cajun seasoning or a squeeze of lime juice instead of lemon.
