Ingredients
  

Donuts

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup apple cider, reduced
  • 1 large egg lightly beaten
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Cinnamon Sugar Coating

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Preparation

  • Reduce the apple cider by simmering it in a saucepan until it measures 1/2 cup; set aside to cool.
  • Whisk together the flour, 1/2 cup sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.

Making the Donut Batter

  • In another bowl, whisk together the cooled reduced apple cider, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined; be careful not to overmix the batter.

Frying the Donuts

  • Heat 2-3 inches of oil in a large heavy-bottomed pot or Dutch oven to 350°F (175°C).
  • Drop spoonfuls of batter into the hot oil, frying 2-3 donuts at a time for 2-3 minutes per side until golden brown.
  • Remove the fried donuts with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.

Coating the Donuts

  • While the donuts are still warm, prepare the cinnamon sugar coating by combining 1/2 cup sugar and 1 tablespoon cinnamon in a shallow bowl.
  • Dip each donut in melted butter, then roll it in the cinnamon sugar mixture until fully coated.
