Quick way to grow a No-Bake Cheesecake

This recipe provides a quick and easy way to make a delicious no-bake cheesecake, perfect for a fast dessert without an oven.

Equipment

  • 20cm springform tin
  • mixing bowls
  • electric mixer/whisk

Ingredients
  

Crust

  • 250 g digestive biscuits
  • 100 g unsalted butter, melted

Filling

  • 500 g cream cheese, softened
  • 100 g icing sugar
  • 300 ml double cream

Instructions
 

Crust

  • Crush the digestive biscuits into fine crumbs and mix with melted butter.
  • Press the mixture into the base of a 20cm springform tin and chill for 30 minutes.

Filling

  • Beat cream cheese until smooth, then gradually add icing sugar and mix well.
  • In a separate bowl, whip the double cream until soft peaks form, then gently fold into the cream cheese mixture.
  • Spoon the filling over the chilled biscuit base and smooth the top.
  • Chill the cheesecake for at least 3-4 hours, or preferably overnight, until set.

Notes

For an extra touch, top with fresh berries or a fruit compote before serving.
