Quick way to grow a No-Bake Cheesecake

Ingredients
Crust

digestive biscuits

unsalted butter, melted
Filling

cream cheese, softened

icing sugar

Instructions
Crust
Crush the digestive biscuits into fine crumbs and mix with melted butter.
Press the mixture into the base of a 20cm springform tin and chill for 30 minutes.
Filling
Beat cream cheese until smooth, then gradually add icing sugar and mix well.
In a separate bowl, whip the double cream until soft peaks form, then gently fold into the cream cheese mixture.
Spoon the filling over the chilled biscuit base and smooth the top.
Chill the cheesecake for at least 3-4 hours, or preferably overnight, until set.
Notes
For an extra touch, top with fresh berries or a fruit compote before serving.
