For the Chicken

  • 1 lb boneless, skinless chicken breasts
  • 1 tsp Chipotle chili powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Garlic powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tbsp Olive oil

For the Bowls

  • 2 cups Cooked white or brown rice
  • 1 can Black beans, rinsed and drained
  • 1 cup Corn kernels (fresh or frozen)
  • 1/4 cup Red onion, finely diced
  • 1 Avocado, diced

For Serving

  • your choice Salsa
  • Sour cream or Greek yogurt
  • Shredded lettuce
  • Cilantro, chopped

Optional add-ins

  • Queso
  • Guacamole
  • JalapeƱos

Instructions
 

Prepare the Chicken

  • Cut the chicken breasts into 1-inch cubes and season them with chipotle chili powder, cumin, paprika, garlic powder, salt, and black pepper.
  • Heat olive oil in a large skillet over medium-high heat, then cook the seasoned chicken for 5-7 minutes until fully cooked and lightly browned.

Assemble the Bowls

  • Divide the cooked rice evenly among two bowls.
  • Add the cooked chicken, black beans, corn, diced red onion, and diced avocado to each bowl.
  • Top each bowl with your favorite salsa, a dollop of sour cream or Greek yogurt, shredded lettuce, and fresh cilantro.

Serve and Enjoy

  • Serve immediately with lime wedges and any optional add-ins like queso, guacamole, or jalapeƱos.
