Ingredients
  

Stir Fry

  • 1 lb Bok Choy chopped
  • 8 oz Mushrooms sliced
  • 3 cloves Garlic minced
  • 1 inch Ginger grated
  • 3 tbsp Soy Sauce
  • 1 tbsp Sesame Oil
  • 2 tbsp Vegetable Oil
  • 1 tsp Cornstarch
  • 2 tbsp Water
  • 0.5 tsp Red Pepper Flakes optional

Preparation

  • Whisk together soy sauce, sesame oil, cornstarch, and water in a small bowl to create the stir-fry sauce.
  • Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.

Cooking

  • Add minced garlic and grated ginger to the hot oil and stir-fry for about 30 seconds until fragrant.
  • Stir in the sliced mushrooms and cook for 3-5 minutes until they become tender and slightly browned.
  • Add the bok choy to the skillet and stir-fry for another 2-3 minutes, until it starts to wilt but remains crisp.
  • Pour the prepared stir-fry sauce over the vegetables and toss to coat, cooking for 1-2 minutes until the sauce thickens.
  • Serve immediately, optionally garnished with red pepper flakes, alongside rice or noodles.

Notes

For extra crunch, add some toasted sesame seeds or chopped peanuts just before serving.
