  • 2 inches fresh ginger sliced
  • 4 garlic cloves minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar

Noodles & Toppings

  • 4 oz rice noodles
  • 2 bok choy chopped
  • 1 cup mushrooms sliced
  • 2 scallions sliced, for garnish
  • 0.5 tsp red pepper flakes optional

Preparation

  • In a large pot, combine vegetable broth, sliced ginger, minced garlic, soy sauce, sesame oil, and rice vinegar. Bring the mixture to a simmer over medium heat.

Cooking

  • Add rice noodles, bok choy, and sliced mushrooms to the simmering broth. Cook for 5-7 minutes, or until the noodles are tender and the vegetables are cooked through.
  • Ladle the broth and noodles into bowls. Garnish with sliced scallions and red pepper flakes, if desired.

Notes

For an extra boost of protein, consider adding cooked chicken or tofu during the final minutes of simmering. Adjust the amount of ginger and garlic to your taste preferences.
