Main Ingredients

  • 3 cups chicken breasts, cooked and shredded
  • 7 pita bread or large tortillas
  • 1 cup hummus
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 0.5 red onion, thinly sliced
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup fresh parsley, chopped

Lemon-Tahini Dressing

  • 0.25 cup tahini
  • 2 tbsp lemon juice
  • 2 tbsp water
  • 1 clove garlic, minced
  • 0.25 tsp salt
  • 1 pinch black pepper

Instructions
 

Prepare the Filling

  • In a large bowl, combine the shredded chicken, diced cucumber, diced tomatoes, sliced red onion, crumbled feta cheese, and chopped parsley.

Make the Dressing

  • In a small bowl, whisk together the tahini, lemon juice, water, minced garlic, salt, and pepper until smooth and well combined.

Assemble the Wraps

  • Warm the pita bread or tortillas according to package instructions. Spread a generous amount of hummus on each warmed pita or tortilla. Divide the chicken mixture evenly among the pitas/tortillas.

Serve

  • Drizzle each wrap with the lemon-tahini dressing. Fold or roll up the wraps and serve immediately.

Notes

For extra flavor, marinate the chicken in Mediterranean spices before cooking. You can also add olives or bell peppers to the filling.
