  • 1 lb spicy Italian sausage
  • 1 medium yellow onion
  • 2 cloves garlic
  • 4 cups chicken broth
  • 2 lbs potatoes
  • 0.5 cup heavy cream
  • 2 cups fresh spinach

Preparation

  • Brown the spicy Italian sausage in a large pot, breaking it up as it cooks. Drain excess fat.
  • Add diced onion and minced garlic to the pot, cooking until softened.
  • Pour in chicken broth and add peeled, diced potatoes. Bring to a boil, then simmer until potatoes are tender.
  • Stir in heavy cream and fresh spinach, cooking until spinach wilts. Season with salt and pepper to taste.

Notes

For extra spice, add a pinch of red pepper flakes with the onion and garlic. You can also use kale instead of spinach for a healthier option.
