  • 2 lbs chicken breast boneless, skinless
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 4 garlic minced
  • 6 cups chicken broth
  • 14.5 oz canned diced tomatoes
  • 1 cup heavy cream
  • 5 oz fresh spinach
  • 0.5 cup Parmesan cheese grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp Italian seasoning

Preparation

  • Dice the chicken breasts into 1-inch pieces and season them with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add the seasoned chicken to the pot and cook until browned, about 5-7 minutes. Remove the chicken and set aside.

Cooking the Soup

  • In the same pot, add the diced onion and cook until softened, about 3-4 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Pour in the chicken broth and diced tomatoes, then bring the mixture to a simmer.
  • Return the cooked chicken to the pot and stir in the heavy cream. Continue to simmer for 10-15 minutes, allowing the flavors to meld.
  • Finally, add the fresh spinach and grated Parmesan cheese, stirring until the spinach wilts and the cheese is melted and well combined.

Serving

  • Taste and adjust seasonings as needed. Serve hot and enjoy!

Notes

For an extra creamy soup, you can blend a portion of the soup before adding the chicken back in. This soup pairs wonderfully with crusty bread for dipping.
