Ingredients

Main Ingredients

  • sliced 4 chicken thighs
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 bell peppers (red, yellow, or green), chopped
  • 3 cloves garlic, minced
  • 1 28-ounce can crushed tomatoes
  • 1/2 cup chicken broth

  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

Cooking Steps

  • Season chicken with salt and pepper.
  • Heat olive oil in a large skillet or Dutch oven over medium-high heat. Brown chicken thighs for 3-5 minutes per side, then remove and set aside.
  • Add chopped onion and bell peppers to the skillet, cooking until softened (about 5-7 minutes). Stir in minced garlic and cook for another minute until fragrant.
  • Pour in crushed tomatoes and chicken broth. Season with oregano, basil, salt, and pepper, then bring the mixture to a simmer.
  • Return chicken thighs to the skillet. Cover, reduce heat to low, and simmer for 20-25 minutes, or until the chicken is cooked through.
  • Garnish with fresh parsley before serving. Serve hot, optionally with pasta or crusty bread.

Notes

For extra flavor, you can add a splash of red wine with the crushed tomatoes. Adjust the spice level by adding a pinch of red pepper flakes. Chicken Cacciatore pairs well with a side of pasta, rice, or a fresh green salad.
