  • 400 g Rigatoni pasta
  • 800 g Canned crushed tomatoes
  • 4 Garlic cloves minced
  • 1 tsp Red chili flakes or more, to taste
  • 0.25 cup Fresh parsley chopped
  • 2 tbsp Olive oil
  • Salt to taste
  • Black pepper to taste
  • Parmesan cheese for serving, grated

Preparation

  • Cook the rigatoni according to package directions in a large pot of salted boiling water until al dente.
  • While the pasta cooks, heat olive oil in a large skillet over medium heat and add minced garlic and red chili flakes, cooking until fragrant (about 1 minute).
  • Stir in the crushed tomatoes, season with salt and pepper, and bring to a simmer.
  • Once simmering, reduce heat to low and cook for 15-20 minutes, allowing the sauce to thicken slightly and flavors to meld.
  • Drain the cooked rigatoni, reserving about half a cup of pasta water.
  • Add the drained pasta to the arrabbiata sauce, tossing to combine.
  • If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  • Stir in the fresh chopped parsley.
  • Serve immediately, garnished with grated Parmesan cheese.

Notes

For extra flavor, you can add a pinch of dried oregano to the sauce. Adjust the amount of chili flakes to your preferred spice level. A splash of red wine can also deepen the flavor of the sauce if desired.
