  • 4 flour tortillas medium-sized
  • 1 cup shredded cheese Cheddar, Monterey Jack, or a blend
  • 1/2 cup cooked chicken shredded or diced (optional)
  • 1/4 cup sautéed bell peppers and onions (optional)
  • 1 tbsp butter or oil

Preparation

  • Heat a large non-stick pan or griddle over medium heat.
  • Lightly butter one side of a tortilla, then place it butter-side down in the hot pan.
  • Sprinkle half of the cheese over the tortilla, covering one side.
  • Add any desired fillings like chicken, bell peppers, and onions onto the cheese.
  • Place another tortilla on top of the fillings, or fold the existing tortilla in half.
  • Cook for 2-3 minutes per side, or until golden brown and the cheese is melted and bubbly.
  • Remove the quesadilla from the pan, slice it into wedges, and serve immediately.

Notes

For extra flavor, sprinkle a pinch of chili powder or cumin on the cheese before adding fillings. Serve with salsa, sour cream, or guacamole for dipping.
