  • 8 oz egg noodles
  • 2 inches fresh ginger peeled and grated
  • 4 garlic cloves minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 carrots peeled and sliced
  • 2 celery stalks sliced
  • 3 green onions sliced, for garnish

Cooking Steps

  • In a large pot, combine chicken broth, shredded chicken, grated ginger, and minced garlic. Bring the mixture to a boil.
  • Add the egg noodles, sliced carrots, and sliced celery to the pot. Reduce heat and simmer until the noodles are tender and the vegetables are cooked through, approximately 8-10 minutes.
  • Stir in the soy sauce and sesame oil. Taste and adjust seasonings as needed.
  • Ladle the hot soup into bowls. Garnish with sliced green onions before serving.

Notes

For extra flavor, you can sauté the ginger and garlic in a little oil before adding the broth. Feel free to add other vegetables like spinach or mushrooms. This soup tastes even better the next day!
