Cookies

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract

Latte Glaze

  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • 1 teaspoon instant coffee or espresso powder
  • 1/2 teaspoon vanilla extract

Instructions
 

Cookies

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • Whisk together flour, ginger, cinnamon, cloves, baking soda, and salt in a medium bowl.
  • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, molasses, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Drop rounded spoonfuls of dough onto the prepared baking sheets. Bake for 10-12 minutes, or until the edges are firm and the centers are still soft.
  • Transfer to a wire rack to cool completely.

Latte Glaze

  • In a small bowl, whisk together powdered sugar, milk, instant coffee powder, and vanilla extract until smooth.
  • Once cookies are completely cool, drizzle or spread the glaze over them.

Notes

For extra festive cookies, sprinkle a pinch of ground cinnamon or nutmeg on top of the glaze before it sets. You can also adjust the amount of coffee powder in the glaze to your preferred strength. Store cookies in an airtight container at room temperature for up to 3-4 days.
