  • 2 cans canned whole kernel corn, drained
  • 1 can canned creamed corn
  • 1 box cornbread mix (e.g., Jiffy)
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons honey

Garnish (Optional)

  • Fresh chives, chopped for garnish

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.

Mixing

  • In a large bowl, combine the drained whole kernel corn, creamed corn, cornbread mix, sour cream, melted butter, and honey.

Baking

  • Pour the mixture into the prepared baking dish and bake for 30-35 minutes, or until golden brown and set.
  • Allow to cool slightly before serving, and garnish with fresh chives if desired.

Notes

For extra sweetness, you can increase the amount of honey. This casserole is also great with a pinch of cayenne pepper for a little kick!
