  • 2 bell peppers sliced (any color)
  • 1/2 red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup olives pitted and halved
  • 1/4 cup feta cheese crumbled (optional)

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Preparation

  • Prepare the chicken by cutting it into thin strips and slice the bell peppers, red onion, and halve the cherry tomatoes and olives.
  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper for the sauce.

Cooking

  • Heat a large skillet or wok over medium-high heat and add the chicken, stirring frequently until lightly browned and cooked through, about 3-4 minutes.
  • Add the bell peppers and red onion to the skillet and stir-fry for 1-2 minutes until slightly tender-crisp.
  • Stir in the cherry tomatoes and olives and cook for another minute.
  • Pour the prepared sauce over the chicken and vegetables, tossing to coat everything evenly.
  • Remove from heat and, if desired, sprinkle with crumbled feta cheese before serving.
