  • Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides and lightly grease the paper.
  • In a heavy-bottomed saucepan, combine sugar, butter, heavy cream, and corn syrup.
  • Cook over medium heat, stirring until the sugar dissolves and the butter melts.

Cooking the Caramel

  • Bring the mixture to a boil without stirring, then reduce heat to medium-low and continue to boil.
  • Cook until the caramel reaches 245°F (118°C) on a candy thermometer, stirring occasionally to prevent burning.
  • Remove from heat and stir in the vanilla extract.

Finishing Touches

  • Pour the hot caramel into the prepared baking dish and let it cool completely at room temperature for at least 2 hours.
  • Once firm, lift the caramel out of the dish using the parchment paper and cut it into desired pieces.
  • Wrap each caramel individually in wax paper or parchment paper for storage.
