  • 1 Puff pastry sheet, thawed
  • 4 oz Goat cheese softened
  • 1/4 cup Fig jam
  • 1 Egg beaten (for egg wash)
  • 1 tsp Fresh thyme chopped (optional)

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Carefully unroll the thawed puff pastry sheet onto a lightly floured surface or parchment paper.
  • Spread the softened goat cheese evenly over the puff pastry, leaving a small border around the edges.
  • Dollop the fig jam over the goat cheese and gently spread it, then sprinkle with fresh thyme if desired.
  • Starting from one long edge, carefully roll the pastry tightly into a log, ensuring it's sealed.
  • Slice the log into 1/2-inch thick rounds and arrange them on the prepared baking sheet.
  • Brush the tops of the pinwheels with the beaten egg wash.
  • Bake for 15-20 minutes, or until golden brown and puffed, then let them cool slightly before serving.

Notes

For extra flavor, you can add a drizzle of balsamic glaze after baking. These pinwheels are best served warm but are also delicious at room temperature.
