Brownie Layer

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp salt

Cheesecake Swirl

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract

Brownie Layer

  • Preheat your oven to 350°F (175°C) and grease and flour an 8x8 inch baking pan. In a medium bowl, whisk together the melted butter and 1 cup of granulated sugar.
  • Beat in the two large eggs one at a time, then stir in 1 teaspoon of vanilla extract. In a separate bowl, combine the all-purpose flour, unsweetened cocoa powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Spread the brownie batter evenly into the prepared baking pan.

Cheesecake Swirl

  • In a small bowl, beat together the softened cream cheese, 1/4 cup of granulated sugar, the egg yolk, and 1/2 teaspoon of vanilla extract until smooth.
  • Drop spoonfuls of the cheesecake mixture over the brownie batter. Use a knife or skewer to gently swirl the cheesecake into the brownie batter.
  • Bake for 25-30 minutes, or until a toothpick inserted into the brownie comes out with moist crumbs. Let the brownies cool completely in the pan before slicing and serving.
