  • 2 cups cooked chicken shredded
  • 1 cup BBQ sauce
  • 10 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 0.5 cup red onion finely diced

Preparation

  • In a medium bowl, combine the shredded chicken with the BBQ sauce, ensuring the chicken is evenly coated.
  • Heat a large skillet or griddle over medium heat. Lightly grease if necessary.

Cooking

  • Place one tortilla on the hot skillet. Sprinkle half of the tortilla with a quarter cup of cheese, a portion of the BBQ chicken mixture, and some diced red onion.
  • Add another quarter cup of cheese over the chicken and onion. Fold the other half of the tortilla over the filling.
  • Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and bubbly. Repeat with the remaining tortillas and filling.
  • Remove from the skillet, slice into wedges, and serve immediately with optional toppings like sour cream and fresh cilantro.

Notes

For extra flavor, use a smoky BBQ sauce. Feel free to adjust the amount of red onion and cheese to your liking. Leftovers can be stored in the refrigerator and reheated in a skillet or microwave.
