Main Ingredients

  • 2 lbs chicken breast
  • 1 cup wild rice blend
  • 6 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 0.5 cup heavy cream
  • 2 tbsp fresh parsley, chopped
  • salt to taste
  • black pepper to taste

Instructions
 

Cooking

  • Add chicken, wild rice, chicken broth, carrots, celery, onion, and garlic to a slow cooker. Season with salt and pepper.
  • Cook on high for 2-3 hours or on low for 4-6 hours, until chicken is cooked through and rice is tender.
  • Remove chicken, shred it, and return to the slow cooker.
  • Stir in heavy cream and fresh parsley. Serve warm.

Notes

For a creamier soup, you can blend a portion of the soup before adding the shredded chicken and cream. You can also add other vegetables like mushrooms or spinach.
