  • 1/4 cup butter, melted
  • 2 tbsp fresh parsley, chopped

  • Dice the chicken breasts into 1-inch pieces. In a large pot or Dutch oven, combine chicken, chicken broth, carrots, and celery. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes, or until chicken is cooked through and vegetables are tender.
  • While the soup simmers, prepare the dumpling dough. In a medium bowl, whisk together flour, baking powder, and salt. Add milk and melted butter, and stir until a soft dough forms.
  • Drop spoonfuls of dumpling dough into the simmering soup. Cover and cook for an additional 10 minutes, or until the dumplings are puffed and cooked through.

Notes
